Gastronomic Programme “Dinner Is Served: A Revolution in Taste”

We will begin with a guided tour of the palace's magnificent state rooms, discovering how balls, receptions and banquets were organised in the past, and how dishes were presented and served.

After the tour, we will descend to the recently restored Yusupov Kitchens, where the gastronomic part of the programme awaits us.

Accompanied by a light appetiser, guests will enjoy a lecture entitled “A Revolution in Taste” and a demonstration of how to prepare the French dessert croquembouche.

You will learn about the emergence of the dessert course, the variety of historical recipes and culinary traditions, and the finer points of preparing this elaborate dessert.

And, of course, you will have the opportunity to taste the finished croquembouche, accompanied by a refined delicacy dating back to the 16th century — creamy ice cream — and a cup of hot tea.
